The Gassan No Yuki Junmai Ginjo is characterised by a fine aroma and fruity flavour, with fine apple and pear notes, as well as mild acids. The texture is silkily smooth, with a clean, crispy surface.
This is a junmai ginjo made of 55% high-quality polished rice, which means that 4% of the rice grain is removed, leaving only the core of the rice for obtaining a more refined and finer mouthfeel. The junmai expression indicates that no additional alcohol was added, but the alcohol comes only from the fermentation of the rice.
This sake can be served chilled or slightly warmed depending on personal preference. It is often paired with seafood, or grilled vegetables.
