One interesting and perhaps surprising property of the Pechuga Mezcals is that during the third distillation process a poultry is hung beside the still, from which special and exciting flavours pervade it. However it has such a drawback that if we are vegetarians, then we cannot consume it. The BruXo No. 2 Pechuga - Joven offers a downright simple solution for this by leaving out the poultry from the distillation process. With this they open the way for vegetarians too, to be able to try out one of Mexico's classic agave distillates. Espadin and Barril agaves are its main components, which are burnt in an oven dug into the ground with pinewood. Then these burnt agaves are pressed with a stone wheel turned by a horse. The liquid obtained from this is subjected to a double distillation and during the process the characteristic and refined flavour of Bruxo takes shape under the effect of the baked agave. In every drop of it the family's dedication towards the Mezcal and the two generations' worth of professional knowledge can be felt, with which they perfected their distillate. And as the end result we get a soft smoky, sweet, spicy-flavour-full Pechuga Mezcal, every sip of which is an experience. Whether we consume it on its own or mixed into premium cocktails, it is perfect every way.
