The armagnac is the longest-produced French wine distillate. It was already known in the Middle Ages for its healing effect. From the 14th century there are records of its making. Similarly to cognac, armagnac is also made with the distillation and ageing of white wine. After the phylloxera epidemic resistant varieties were planted in the local plantations too, of which mainly the Ugni blanc, the Folle Blanche and the Colombard grape are used for wine distillate. The distillation takes place in the winter following the harvest, and must be completed by March 31 at the latest. Alongside the continuous distillation specifically characteristic of armagnac, taking place in the distillation apparatus called Armagnacais, the less widespread cognac-type, double distillation process is also applied. The distillate created this way will be 52-60 proof, differently from what is customary in the Cognac region, where it is around 70%. The distillate must be aged in 400-litre barrels made from French oak for at least two years. The VS version is mixed from drinks aged for at least 3 years, contrary to the minimum 2-year ageing customary in the case of armagnacs. We recommend it primarily for before-meal consumption, or for the making of cocktails.
