The Agrapart & Fils "Vénus" 2017 is an exceptional Blanc de Blancs Grand Cru Champagne made exclusively from Chardonnay. The grapes are harvested from the famous "La Fosse" plot in the village of Avize in the Côte des Blancs — a tiny 0.3-hectare parcel planted in 1959. The site is traditionally worked by horse; the horse is named Vénus, hence the name of the Champagne.
Production process:
- Viticulture: The site is worked by horse, avoiding heavy machinery and preserving the soil's natural state.
- Fermentation: The wine ferments in demi-muids without using new oak, and is bottled directly with cork, without prior filtration.
- Ageing: After bottling, the wine ages 6 years on the lees, with hand riddling and disgorgement 60 days before release, preserving its natural freshness. The Champagne is Brut Nature — no dosage added.
Tasting notes:
- Nose: Initially restrained citrus and dried-fruit notes; then a complex and intense bouquet of white fruits, fresh honey, lemon-bergamot, jasmine, fresh hazelnut, truffle and toasted aromas, with a subtle chalky tone.
- Palate: Round and soft, saline and mineral; full-bodied and elegant, with ripe fruit, white rose, fresh lemon and energetic spices, with a long, fresh and iodine-tinged finish.
Food-pairing suggestions: Excellent with lobster-stuffed ravioli, truffle dishes or Iranian beluga caviar. For a bolder choice, caramelized veal sweetbread complements this Champagne perfectly.
